So as you may or may not know, we love us some hockey in this house. More specifically, we love our Los Angeles Kings. But ever since Dustin Penner joined the Kings late last season, he has been something of a running joke in this house {and I think other households too} for his failure to, well, score. Dustin Penner rally towel anyone? Inside joke…a very inappropriate one at that. Anyhoo, the current running joke/press linking Penner with pancakes and the ensuing nicknames, Pennercakes, aka Penner Pancakes, aka Uncle Penner’s pancakes, etc have actually endeared the guy to us. So in honor of Penner, his pancakes, his efforts for charity, and, most importantly, his 5th goal of the season against Tampa Bay, here is a very yummy recipe for a homemade buttermilk caramel syrup that will knock your skates off or at least throw your back out…
Buttermilk Caramel Syrup (recipe courtesy of Creations by Kara)
{note: I halved this recipe}
3/4 cup Buttermilk
1/2 cup Brown Sugar
1/2 cup granulated sugar
1/4 cup butter
1/2 tsp vanilla
1/2 tsp baking soda
DIRECTIONS:
1. In a large sauce pan, bring buttermilk, butter, and sugars to boil over medium heat.
2. Remove from heat and whisk in vanilla, then baking soda. The baking soda will cause the mixture to bubble up like a shaken soda can, so be sure to add the baking soda last. The bubbles will go away upon standing.
3. Serve warm on pancakes, waffles, ice cream, yogurt, by itself on a spoon. This stuff is so good you will find ways to eat it. I stored my excess in a pint sized mason jar which I why I posted my halved version of Kara’s recipe.

Is it sacrilege to serve this with frozen waffles? maybe but I'm not really caring right now...nom nom nom
Kara claims this is a life changing recipe. Now I don’t like to throw that word around unless I really mean it. I would have to say, however, that this is a grocery-list-changing recipe because now instead of putting maple syrup on my list, I will be buying buttermilk. And if you give a girl some buttermilk, chances are she will make some pancakes….and then… she’ll want some hockey to go with it.
And hopefully, with playoff season fast approaching, Dustin Penner’s wife doesn’t get a hold of this recipe! Go Kings Go!
